Screen Shot 2016-08-12 at 3.41.07 PMChef Mark Sparacino, owner of Chicago’s Prosecco Ristorante, is moonlighting in Austin as executive chef of the Italian-American supper club concept Sophia’s. Restaurant management company BDG Hospitality Group tapped Sparacino to take over the kitchen of the high-profile space—most recently actress Sandra Bullock’s restaurant, Bess Bistro—which closed last fall. Italian-American standards are joined on the menu by modern dishes such as Crudo with fresh market fish, chili pepper pearls, orange and micro salad. House-made vermouths, Amaro and cocktails like the La Rosa (vodka, pink grapefruit liqueur, strawberry, fresh citrus and prosecco) make up much of the beverage menu. Speakeasy style cues are combined with modern accents to create a posh atmosphere. Elements such as custom artwork and an antique European pewter bar to strike a balance between old and new.
